Chimichurri

Cowboy Butter Dipping Sauce


Thai Mango

These sauces are fabulous for seafood or even chicken or steak.

The chimichurri and the cowboy butter are very garlicy and the Thai Mango is divine.

The below recipes are for the Cuisine Companion however you can do them any way you want.

Chimichurri


3 – 4 cloves of garlic peeled
3 green onions
1 Jalapeno (test for heat)*
½ bunch of Parsley
½ bunch coriander
¼ Cup red wine vinegar
½ Cup good quality Olive Oil
1 teaspoon sugar
Salt and Pepper to taste

METHOD

1. Place garlic, shallot and jalapeno into the mini bowl with blade, place on the lid and lock

2. Lock Cuisine Companion lid

3. Pulse for 15 seconds

4. Scrape down sides with spatula

5. Add the Parsley, Coriander, vinegar, sugar and seasoning. Lock lid and pulse for 12 seconds

6. With motor running on speed 5 drizzle in olive oil



Cowboy Butter Dipping Sauce

(Adapted from Eatwell101)


1/2 bar butter (125grms)
Juice and zest of half a lemon
4 cloves garlic, minced
1 tablespoon Dijon mustard
Pinch of cayenne pepper
1/4 teaspoon paprika
2 tablespoon fresh chopped parsley
1 tablespoon freshly chopped chives
2 teaspoons minced thyme
1/4  teaspoon crushed chili flakes
Salt and freshly ground black pepper (taste before adding especially if using salted butter)

METHOD

1. Place garlic and herbs into the mini bowl with blade, place on the lid and lock

2. Lock Cuisine Companion lid

3. Pulse for 15 seconds

4. Remove mini bowl from bowl. Add butter to big bowl and melt at speed 5 at 80C for 3 mins

6. Add all other ingredients (except herbs) and mix speed 4 1 min

7. Add the herbs and stir through


Thai Mango Sauce

(Adapted from RecipeTinEats)

1/2 bunch coriander
1/2 red onion
1 fresh mango. roughly diced
1 tbsp fish sauce
1 tbsp sriracha
2 - 3 tbsp coconut milk (adjust for desired sauce consistency)
Juice of 1 lime

METHOD

1. Place coriander and onion in mini bowl and pulse for 12 - 15 seconds then remove from bowl

2. Add all other ingredients and pulse for 60 seconds

3. Add the coriander and onion back to bowl and stir through.
