Black Forest Waffles



Cherries are out in supermarkets at the moment and combine that with Waffle Sunday and what do we have... Black Forest Waffles.

Now I am actually going to call these Black Woods Waffles as Black Forest has Kirsch in it and even I balk at alcohol for breakfast.

This was quite delish and will no doubt make a Christmas appearance..

Ingredients

125g butter diced
2 cups plain flour
3 tablespoons unsweetened cocoa
2 tsp baking powder
1 tsp bicarb soda
1/2 tsp salt
2 cups of buttermilk
2 large eggs

Method

1. Place the butter in the bowl with the kneading blade.
2. Select Speed 3 Temp 80 Time 3 min.
3. Add remaining ingredients and select Pastry P1 Time 1m 30s.
4. Pause program after 30s and scrape down sides.
5. Resume program.
6. Rest the batter while attending to the topping
7. Cook waffles in the usual manner.


Topping

Approx 30 cherries
Approx 1/2 tablespoon Balsamic Vinegar
Approx 2 tablespoons water
1/2 tablespoon sugar
30 mls thickened cream
1/2 tin of condensed milk

Method

1. Save some cherries for garnish. With the rest, take out the stalk and cut in half
2. Place in a saucepan with the water, sugar and balsamic. Count how many you put in so you can make sure you take out that many seeds later.
3. Put on high until boiling then turn down to a simmer
4. Put cream in the CC with the whisking blade
5. Set on speed 3 and start (don’t set a time – watch it)
6. After a few seconds, increase speed to 9 by building up. Don’t leave the machine – watch it. After 15 seconds you can take the stopper out and look inside and it shouldn’t splash. Watch through the hole until the cream hugs the sides of the bowl. If it goes too far it will turn to butter so keep your eyes open. Mine took a little under a minute but it will depend on the temperature of everything.
7. Once cream is at “soft peak” stage – ie – not running down the sides of the bowl, add the condensed milk and start slow (speed 4) and then build up to speed 8 mix until hugging the side of the bowl – mine took 30 seconds. Stop and check on the cherries
8. Cherries should be soft. Mash in the saucepan with a potato masher. Seeds should now come out easy. Remove seeds.
9. Plate up and enjoy
