Banana Bread
Banana Bread. I know there are a lot of recipes for this.
I have been making this about once a month for a couple of years and know the recipe off by heart. Just wanted to see how it went in the CC. Loved the fact that I could do it all (apart from baking of course) in the one bowl.
When I first made it I creamed the sugar and butter in the mixmaster, mashed the bananas in the food processor and then mixed in a bowl. Got sick of all that so ended up using melted butter from the microwave and mixing all by hand.
The CC did it so quickly. It turned out lovely
Ingredients
3 large bananas
125 grams butter
2/3 cup of white sugar
2 eggs
1 cup plain flour
1 cup self-raising flour
1 teaspoon baking powder
1 teaspoon bicarb soda
2 tablespoons caraway seeds (or you can use chopped walnuts
or whatever you like)
Method
Heat oven to 170°C
Grease and line a loaf tin
Kneading Blade
Place sugar and butter (large cubes) in bowl - Speed 2 time
40 seconds
Scraped down sides with spatula - Speed 8 time 1 minutes
Add 2 of the bananas – reserving 1 - Speed 8 time 1 minute
Add eggs - Speed 4 time 30 seconds
Add flours and powders
Speed 4 time 30 seconds
Scrape down sides
Speed 4 time 30 seconds – check consistency
Slice half of the remaining banana in small slices on an
angle for top decoration
Chop the rest of the banana in small cubes
Carefully remove blade from bowl and fold in chopped banana
and caraway seeds – pour into tin and place sliced banana on top
LET SIT FOR 2 HOURS
170 degrees between 50 and 70 mins – keep an eye on after 45
mins
